Healthy salmon pizza pinwheels
I’m usually not a pizza person. Pasta, rice, and noodles would always be my preferred choices either outside or at home. But there are days like today, I just crave for something doughy and a little bit indulgent. And somehow, pizza would always pop up in my head.
So to prepare for such days, I occasionally stock up a pack Spelt Pizza Dough in the fridge which, I know, would be perfect for a quick home-made pizza and save me from ordering one of those fat and unhealthy ones when the moment hits
The toppings would depend on what I have on hands or can buy quickly after work. For today, it’s salmon (thawed from freezer), canned artichokes, fennel bulb, capers, vegan mayonnaise and dill. So simple and so quick! My pizza pinwheels were ready for the oven in less than 10 mins.
Ingredients – 9 rolls
(2-3 rolls per serving)
1 pack (400gr) of store-bought Spelt Pizza Dough
250gr fresh salmon, skin removed
1 can (200gr) artichokes, rinsed and remove stems
1/2 fennel bulb, about 60gr , sliced
50-70gr vegan mayonnaise (this is nut-based so will not be suitable for those allergic to nuts. Use normal mayonnaise in that case)
1 tbsp capers, rinsed
1 handful of fresh dill
Method
Salmon: slice into strips of about 2cm wide
Rinse artichokes, remove stems and shred roughly
Mix half of the capers and chopped dill into the mayonnaise.
(You can replace capers with some chopped olives or half a lime for similar level of acidity)
Roll out the dough
Spread the mayonnaise mix on top, followed by fennel, artichokes, and salmon
Canned artichokes and capers already contain lots of sodium. By rinsing them, we remove a large part of it to prevent excessive saltiness
Add ground pepper or cayenne powder if you like
Sprinkle the remaining chopped dill on top
Roll along the length of the sheet
Cut into about 9-10 pinwheels and arrange them in a non-stick baking tray
Preheat the oven at 225C. Bake for 15mins at 225C, then another 10mins at 200C
Result – A yummy and healthy pizza feast
